How We Actually Measure Grease Resistance
The vast majority of fry box manufacturers claim to be “grease-proof” but cannot substantiate their claims. The TAPPI T 559 Kit Test is the industry standard to measure oil and grease resistance in food packaging, with a 1 to 12 rating. A set of castor oil, toluene, and heptane solutions of increasing strength are used for the test and the strongest solution which a material will withstand without staining is its Kit Rating.
For comparison, dry snack packagings only require a Kit 1-4 rating. The typical greaseproof paper is in the Kit 5-7 range. High fat, high heat foods such as fries require Kit 8 or higher to keep from burning through within the first few minutes.
